Skillet Pizza

With an oven that is broken pizza making seems pretty impossible; until I stumbled upon a little nugget called "skillet pizza". Thanks to Serious Eats my family and I enjoyed some pizza for dinner, no oven required! I used a simple pizza dough recipe from King Arthur flour, some tomato sauce from a jar, mozzarella/provolone blend of cheese of the bagged variety and some pepperoni. This could be simplified even further by just buying some pizza dough. I made two batches of dough at once, enough to make 4 pizzas each, one turning out better than the other but both pretty good. Simple to make, pretty satisfying and it is great if everyone wants something different because you can make a ton of personal sized pizzas. Didn't wanna go too crazy with my trial run here but will definitely make a wider variety the next time.

Snowy Day

There is nothing like enjoying a nice hearty soup or stew on a cold snowy day. Yesterday kinda fit that description so along with the split pea soup that my mother made for dinner, I made my first Irish Soda bread. Compared to making french bread, this is probably even easier since you don't even have to let it rise. Just mix, knead and throw it into the oven. Simple to make and a fantastic companion to your favorite soup.

Ever finish your main course only to realize you have made too much mashed potatoes? Heat up some cast iron with a dab of butter, throw them in and you have a nice snack in just a few minutes.

Typically Breakfast

Breakfast is sometimes my favorite meal of the day. The only real draw back is that there never seems to be enough time in the morning to assemble some intricate meal. However, when I do get the opportunity I enjoy making French toast and fried potatoes. Below is a photo of my typical "had some time this morning" breakfast that I made sunday afternoon. And of course it is accompanied with some ham and BACON.

Dinner and Dessert

Decided to make a little NY strip steak for dinner. Made with some 'Montreal steak seasoning' and garlic salt. Pan fried with some onions and green peppers. Served with some freshly mashed potatoes and corn from a microwaveable bag!
For dessert a "Mancake" for my favorite local bagel place, Camp Umpy's. Chocolate, chocolate chip cupcake, with fluffer nutter frosting and bacon on top. There were even a few grains of salt on some of the bacon. Can I find anything more unhealthy???
